THE WORLDS 50 BEST EXPLORES PERU

It all began with a spark—an idea and a conversation in Copenhagen—driven by the desire to go beyond the plate and explore the boundless curiosity of chefs Daniela Soto-Innes, Jock Zonfrillo, James Lowe, and Ana Ros. The Peruvian culinary community welcomed us, guiding our journey through the eyes and hands of chefs Jose del Castillo, Pedro Miguel-Schiaffino, Pía León, Diego Muñoz, Arlette Eulert, Francesca Ferreyros, and Matias Cilloniz.

From there, we embarked on an intimate exploration of Peru’s four corners—the lush depths of the Amazon, the vibrant landscapes of the North, the mystical Sacred Valley, and the dramatic Canyon—uncovering the unique produce, traditions, and stories that have elevated Peruvian cuisine.

BAR BRUTAL X ELKANO

A guided collaboration in the Basque Country, led by Aitor Arregui of Elkano, offering an intimate look into the roots of Basque tradition and a deep understanding of the local gastronomy—where food becomes both energy and expression, shaped by the sea and the earth.

The journey evolved into a fiery evening co-hosted by Bar Brutal’s Colombo brothers, always in search of an authentic connection to the land.

An exploration of Turkish culinary traditions, Istanbul’s vibrant food scene, and rich heritage—street by street—uncovering the dialogue between Mediterranean and Latin cuisines.
